Thank you, Dave.  It was a nice day, peaceful and quiet.  And I skipped birthday cake this year but I'll probably have a piece today.  I have an outrageously simple recipe for single servings of cake.

The only thing that would have made my birthday better was if I'd been in Yorkshire to celebrate it.

Here's that cake recipe.  It's called 3-2-1 Cake.

You buy a boxed angel food cake mix and a box of any other kind of cake mix you fancy.  Open both packages and mix them together in a ziploc baggie or cannister.  That's how you store the mix.

When you want your own little individual serving of cake, just take 3 tablespoons of the cake mix and stir in 2 tablespoons of water in a coffee mug or custard cup.  Mix thoroughly and then microwave for 1 minute.  Voila!  You have your own freshly baked little piece of cake.  You can eati it warm or let it cool, you can eat it plain or add whatever fruit, whipped cream, frosting or whatever topping you like.  It's called 3-2-1 cake because it's 3 tablespoons cake mix, 2 tablespoons water, 1 minute in the microwave.  And it makes a piece of cake just big enough to satisfy the sweet tooth without being overwhelming or too much.

The beauty of it is you can have  the occasional piece of cake without having to bake a whole cake, which then sits around the house waiting for you to finish it off.  The bad part is that it's so simple and so delicious that you just might make it a habit!  lol
