Peter's Welsh Cakes recipe converted for Ruth

Ruth, I've converted Peter's Welsh Cakes the best I could into American measurments. Hope this helps.

225 g Self Raising Flour - - - - 1 - 1/2 cups all-purpose flour (though you can buy self raising)

1/2 to 1 tsp Mixed Spice - - - - Don't know of an American equivilant (Wikipedea gives you an idea of which spices are used, then I guess you just play around with it yourself)

pinch salt

85 g Caster Sugar - - - - - 1/3 cup plus 2 tsp Baking Sugar

115 g Butter - - - - - 1 stick Butter

85 g Sultanas - - - - a good 1/2 cup Golden Raisins

I'm putting in my receipe for Ruth also, it's real simple Ruth, no conversion needed...you take chocolate Graham crackers and should go great with Peter's Welsh Cakes. break cookies into small bars, open up any flavor of cake icing in an can and from there on,, either rmake them into liitle bars, and "ice" and dip into chocolate sprinkles, or you can make them into little ice filled sandwhich bars, swipe and sprinkle with any colorful toppings, or, you can fillwith an bit of soften whiped "flaovred" cream or ice cream and freeze..they make good coffee dunkers in an hurry, and the kids love making them. You can "pipe"colored icings on them to resemble decorated Christmas packages also...they are "quick"and easy to make...cost less then an simple dozen cookies at the bakery these days. Another simple idea, take figs and stuff with an walnutor other "nut" of some kind and spray with butter and roll into coconut.

Wow, thanks a million, Sue.  Now, thanks to everyone here, I'm going to have "authentic" recipes for the Christmas goodies!!

And thanks to you, Peter, for posting the original recipe.  We always had Welsh cookies at Christmas!

Very cool, Shirley!!  Thank you too.  I guess I'll have to ask Santa for a new "oversized load" chair for the computer now!!

You know what I miss the most, fruitcake, but it is so loaded down with calories, I'm still having an problem not eating an chocolate or two daily going through the house, just not buying any more of it I guess, and set around more veggies. I guess you could say I'm one of the trully great "snack people" in life ! I think in weight watcher's they had us freezing chocolate chips and then sucking on them for an bit of yummy taste...but they are getting better with it all the time as for calories.  The higher the cocoa is suppose to be better for your heart, but it taste yucky to me...very bittersweet.  I'm still better this year then in the past years. I was watching them make cookies yesterday, 2-1/2 sticks of real butter, 3 cups of powdered sugar, flour on top of that, makes me think if someone one playing Russian roulette with an gun to their head diet wise. As chef "Emeril" would say..BAM!

I found a recipe yesterday for another bread pudding, it has a whopping 2 3/4 cups of heavy whipping cream in it.

Still, I have to say I'm tempted to try it nonetheless. I love Bread pudding.

Sue, why put baking powder in them? It is not used in Wesh cakes.
