I'll try not to, Peter.  lol.  And they're even a bit overcooked if you let them go to golden brown.  Just very lightly browned seems to be the ticket.  I usually have to ruin the first batch before I get the griddle temperatuire right.  But even the ruined ones are out of this world.

Peter, what kind of mixed spice is that? Could it be nutmeg, cinnamon, and cloves? or ginger, nutmeg and cinnamon? or something all together different?

I was wondering the same thing.  I have a recipe that we've always used and the only spice/flavorings in it are vanilla and nutmeg.

Wikipedia says it's akin to Garam Masala, but I use Garam Masala and I don't think so.

I would use Cinnamon, Nutmeg, Allspice, Cloves and maybe some Ginger.

I just found the Schwartz website (England's version of McCormick) and this is what it says is in it's Mixed Spices:

Cinnamon (40%), Coriander Seed, Caraway, Nutmeg, Ginger, Cloves.

I have just looked at the jar and it says,Cinnamon,Coriander,Ginger,Dill,Cloves andNutmeg. But no quantities. Hope that is some help.
