We all think of you, Diana  .

I just had strawberry pie and cream for breakfast.

The pie is to die for, and so easy to make, if anyones interested I'll share the recipe.

Make or buy a 9 inch pie crust and blind bake (pre-bake) it.

In a saucepand combine: 1 1/4 cups sugar, 1 tablespoon cornstarch, 1 cup water. Bring to a boil, cook and stir for 2 minutes (it doesnt thicken). stir in 1 - 3 oz pack strawberry jello and 3 tablespoons lemon juice. Put aside to cool until room temp.

Meanwhile Wash and halve 1 quart of fresh strawberries (that's more than 16oz I found out yesterday).

Add strawberries to cooled jello mix, then pour into pre-baked pie crust.

Set in the fridge for about 4 hours, until nice and set.

Serve with whipped cream.
