I understand that I'm having prime rib roast for Christmas dinner...but I'm asked to bring my contribution to the dinner table also in salads...I have three receipes I'm thinking of taking and thought one of them might fit your neeeds as well...

Clam Chowder...crock pot style.....this receipe is not your ordinary Clam Chowder which which per serving is said to have 564 calories abd 34 grams of fat...the "ligthen up version" has 183 calories and 0 grams of fat...and tastes just like the original.

Coat pot with cooking spray...over medium high heat add 1/14 pounds of small red poratoes, cut into 1/2 pieces:cook until lightly browned, 2-3 minutes...Add 2 ribs of chopped celery, 1small chopped onion, and 2 cloves of mince garlic...cook to softened, 2 mins...add 1/2 cup of white wine; cook... stirring up browned bits... until almost evaporated. Add 1 8oounze bottle of clam juice, 1 cup fat-free half and half (cream or milk), salt and pepper to taste, cover bring ot boil, reduce to low and simmer 30 minutes....puree haf of soup until smotth, return to pt, heat threugh and serve...makes 4 servings. (zero fat, 3 mg of cholestrol, 38 grams of carbs)

Broccoli Salad......in an bowl stir together....1.1/2 cups of mayonnaise, 1 1/2 cups cider vinegar,..1/2 cups of sugar, 1/2 cups of raisins...refrigerate 30 mins to allow raisins to plump up.In an large bowl toss together 4 cups of raw broccoli florets, 1 cup of toasted almonds, 2 cups chopped green apple..pared and cored...1/2 pound of bacon diced and fried and drained, 1/2 cup sliced green onion, 1 cup sliced celery....add the dressing and toss well, chill about one hour and serve cold.

Parmesan Party Log (one of my old receipes)....1... 8 oz of cream cheese...1/2 cup parmesan canned grated cheese, 1/4 tsp garlic salt...2 Tablespoons each...finely chooped green pepper and finely chopped pimento....(I double this reciepe ususally).....now soften the cream cheese, add the rest of the ingrediants and mix well, form into an log shape...decorate by rolling into parsely or chopped nuts....serve with crackers. To sparkle this up for the holidays...pat down the cheese about thick enough in finely chopped nuts to cut out small tree shaped mold..invert the bottom of the tree upside down to create the face for an reindeer...add broken small store bought pretzels for antlers, chopped small black olives for eyes and pimento bit in red for the nose...surround an platter with these small reindeers and use crackers iin an long row in the middle for presentation.

Jello Delight...1- 3 oz. package fruit flavored gelatin( in this case lime flavored)....1 pint small curd cottage cheese....1- 20 oz can of pineapple, drained....use juice in other receipes....1- 4 1/2 oz. carton frozen whipped topping.....sprinkle gelatin over cottage cheese, mix well, blend in drained pineapple and frozen whip cream topping, combine gnetly but throughly and chill for 3 to 4 hours. This is one of those receipes that can be made the night before...same for the broccoli salad.

You can do numerous things with the jello...as instead of the pineapple use canned mandrin oranges, orange jello and miniature marshmellows...and it can be an salad as well as an desert with cookies for the kids. I thought the orange would go well with the brocolli salad with the prime rib myself...kids are not much for broccoli salad...so they will get an veggie tray most likley.

Rose' wine Punch....I have served this over the years on many occasions...I like it because you can with small glasses...control the amount your guests are drinking. If you don't already know over here... if drunken guests are in automobile accidents the host can also be held reliable for damages....after one punch bowl...bring out the coffee and desert. I use to serve this at most all my group card games and "Bunco" dice game parties...with appetizers and indeed followed it up with coffee and an simple dessert...it always went over extremely well with my guests. After the end of the games we exchanged small gifts at Christmas...as the desert was being served...and we had an wonderful time...the games loosed up our conversations and we could make clever little quips playing them.... to where we were most relaxed and comfortable even if some of the guests were "new" people. We told jokes while playing these games also. Teased each other sometimes also........Getting together should be about enjoying each others company first, last and always.

2 bottles (4/5 quart) rose' wine, chilled....1/2 cup grenadine syrup, 1/2 cup lemon juice, 1 quart ginger ale, chilled...combine all ingrediants...makes 22 servings of 1/2 cup each. 

All these receipes can be adapted to suit your needs...such as you could add bacon or crab bits on top of the soup...change the green pepper with small sliver of ham in the reindeer cheese molds...and add raspberry sherbert to make the wine punch "creamy". Question.....it says 1/2 cup white wine...cook.....so the cook gets a 1/2 cup of white wine LOL....

I could make hot dogs n  beans taste great if I had enough of the wine....lol....

Hey...I have no problem if you wanna take an wee sip as you "cook".Here's one from my ole nieghbor "Sue" when we were growing up and after she came back up here from California...new husband and new daughter with her...

Christmas Eggnog...by Sue....8 cups of milk...1/2 cup of sugar...10 ex-large eggs...2 pints whipping cream...1/2 gal egg nog(dairy section in your grocery store), 1-1/2 cups brandy, 1-1/2 cups Rum..blend together top with nutmeg....if available...also add from an liquor store some "White Christmas" liquor mixture.

I made this one time...it will knock your socks off you and frizzle your pantyhose....take my word for it...she use to like to serve it in little cups with traditional fruitcake to eat. Brings out the savage beast in an person I think ...one cup does you just fine.  Don't blow your breathe around anyone smoking either....it could turn out to be an flame thrower...to the person smoking.

Sorry for all the mispells....we have been having problems since last night you know...cable company had to get our Tv channels back in for us...and the phone was out an bit earlier today, sounding like messages from Mars on it....I think most likley the effects of this lunar eclispe tongiht....I'm readign in other sites that the Mayan 2012 predictions are here as of with this eclipse....they had been previously miscalculated due to our calendar differences. I feel like the energy right now is more spread out then it was earlier today. You can see this on spaceweather.com also. North America, Mexico and most of Canada has an front seat view of it. It SOES strange things to us in the Holiday mood Beth...take my word for it...I feel almost "joyful" today. Hope nothing bad occurs.
