Sue’s Bread Sauce1 onion cut in half 15 whole cloves 10 fluid ounces Whole milk 1 bay leaf 6 peppercorns 6 oz stale bread, made into crumbs 4 tablespoons butter A good whollop of heavy whipping cream At least 2 ½ hours before dinner: - Stud each half of the onion with cloves - In a saucepan add milk, onion, bay leaf and peppercorns - Scald milk, but do not boil - Remove from heat and leave in a warm place for a good 2 hours 30 minutes before dinner - Strain the milk mixture through a sieve, put sieve aside - Return milk to the range and bring to the boil - Stir in about 4 oz. of the bread crumbs and 1 tablespoon of butter - Place back on a low heat until sauce is thick - Add a little more of the bread crumbs if it is too runny - Just before serving add 1 tablespoon butter and enough cream to make the sauce a semi thick consistency, not too thick but not runny.
