I don't see much of them and wonder where they are at as well as the newbies. I guess time changes all things. We are currently under an weather alert for 80 pmh winds at the Oregon coast and heavy rain by noon, so I'm not staying to long,..need to go shopping before then.  I just wanted to once again say to have an nice Easter ..and hope your all doing well as can be. That includes the oldies, where ever they are at...do wish they would come in an tell us what they are up to these days that they aren't posting much in POE. I'm sure there are some out there that look things over here daily...let's here from you too! Time to drag out the ham to unthaw, so catch you all later on...get those rolls and write done the menu list. Things seem to be getting simpliet every year.

For those of you that have to deal with the loss of fresh tomatoes over here in the states...here's an receipe for you. Black-eyed Pea Salad. 2 cups cooked black-eyed peas or one 15 oz. can rinsed and drained. 1 1/2 cups chopped tomatoes, peeled (about 2 tomatoes), (some people now are going to canned roasted tomatoes) 1 cup cooked frozen corn, 1/4 cup thinly sliced green onion, (I'd add more myself, I like these kinds of onions), 1 med. jalapeno pepper,(I'd add celery instead)  finely chopped, mix together.....Salad dressing...1/3 cup salad oil, 2 tablespoons red wine vinegar, 2 tablespoons lemon juice, 1 tablespoon fresh chopped thyme or 1 teaspoon dried, 1 tablespoon Dijon mustard, pepper to taste... for the dressing ingrediants salad oil, vinegar, lemon juice, thyme, mustard, and pepper put into an jar, with an lid and shake it and pour it over the salad just before serving..I also think an bottled or home made..Honey-Dijon dresssing would be an good substitute..some bacon bits would "pick it up" also. Makes 6 servings. This is very simliar to what is called in the olden days "Hoppin John"..in the south they use to put this around this collards for luck and served "Hoppin John" for money as an New Year dish. Hoppin John was served over an bed of rice, and instead of the salad dressing it had 1/2 c. beef broth, crushed garlic and bit of marjarom added and cooked together with 2 tablespoons bacon drippings and 4 slices bacon to be crumbled up in it..and only one chopped tomato..but do as you wish.I thought the cold salad would go well with Ham and mashed potatoes..as for the kids...they are still in the fresh veggies sticks as of yet and fruited jello...chocolate bunny stage.

We know that lots 'look in' Shirley without actually posting, and yes it does make me wonder where they are, what they are doing, why they can't go one step further to say hello to all their friends here in POE but hey it's a free world (well sort of) so when they feel the time is right eh?

Hoppin John sounds interesting, thanks for that.

Hi Shirley (and everyone else too!)  I try and pop in when i can, but do not always have much time.  i do often pop in to read when i can.

 

just had a nightmare week trying to sort out the brakes on the van.  DH did it, and we finally got them sortd out this morning after doing caliper, ABS, master cylinder, etc.....

We are away next week for a few days to visit my uncle as he is not doing very well at all.  He had brain surgery back in january, and he is now with hospice.

hi all, I try to look in everyday just to contribute a little and have a friendly banter with Ron ( (he likes me realy, lol), many remember me as Mike or Micheal but i changed to L/love a while back. I think we all have 'incidents' in our ongoing lives (thats life lol) and we come and go at times. the important thing is that we return occasionaly...and say hello.Smile

I'm noticing Peter, Micheal...I guess its an sign of the times in ways with keeping in contact with others somedays...Roses.. hope all goes well for the family and friends...here's an blonde joke to ease the car problems for you... 

An blonde was talking to her friend and she says...I was worried about taking my car to an mechanic to get fixed, begin an woman and all but I knew he was alright.... when he said all I needed was some "blinking fluid" for it.

Your more then welcome Ron on the "Hopping John" receipe as you know I love to share them, because your not here in person to enjoy my dinner with me, it comes as close as I can get in sharing it. I made it this morning, minus the dressing (it will get it just before serving time) ...and it turned out pretty good so far, contemplating if I should add some mushrooms or not...personalize it an bit. I try to do something an bit different from one year to the next, just to keep things interesting.
