Ginger cake...and it gets sticky on top after two or three days!

Ingredients:
1 egg
1/2 cup milk
10oz S.R Flour
1/2lb golden syrup
2 - 2.5 oz brown sugar
1 tsp pudding spice
4oz marg
3 good tsp ginger
1/2 tsp bicarbonate of soda
 
Method:
1). Put flour, ginger and pudding spice into bowl.
2). Then put syrup, sugar and margerine into a saucepan and melt, let it cool and then mix with dry mixture.
3). Whip egg and put into syrup mixture, add together, mix bicarbonate and milk, pour into bowl and give a good beating (imagine Ron's face at the bottom of the bowl) Lol
In the meantime have ready a greased and lined tin, put into preheated oven at 350 for 1 hour.......bingo, cake for the lunchbox!

Here is an old favourite of mine and now my daughters and grand daughters, because it is so easy !!!

CUP OF TEA LOAF

1 cup of black tea,1 egg, 8oz self-raising flour, 9oz mixed dried fruit (cake mix), a couple of drops of almond essence, pinch of mixed spice and 4oz sugar.

Put the fruit in a mixing bowl, pour the tea over it, add the egg and mix it all together.  Add sugar and flour, almond essence & mixed spice.  Stir really well.  When it looks like batter pour into a greased loaf tin and bake in the oven at 190oC (375oF) for 60 minutes.  Cool and slice, can be buttered or eaten plain.  Never known this recipe to fail.

I think it will be a diet of Yoghurt, scrambled egg, steamed fish, - if is to be soup I will need to find some cold soup recipes now - vichyssoise perhaps??

Here is one for the fun of it - unless you are having a very big party - or are a mathematical genius don't try it at home.  It is a recipe from World War II for 100 people in a canteen.  Just look at the quantities needed!!

2 lbs Soya Flour, 10 lbs sausage meat, 20 lbs cooked vegetables chopped or minced (can you imagine having to do this!) 2 1/2 lbs onions or leeks and 1 gallon gravy (lol, you could float a boat!), seasoning.

30 lbs potoatoes, (imagine having to peel them!!) 2 lbs Soya Flour, potato water

Fry chopped onion or leek in dripping.  Mix soya flour with gravy and boil up (do you think they had strong men around to lift the stuff?).  Add sausage-meat and cook for a few minutes, sitrring to make a soft paste.  Add chopped vegetables and turn into piedishes or baking tins. Boil or steam potatoes.  Mix Soya flour with vegetable water and mash potatoes to a cream.  Spread on sausage mixture, fork over, dot with dripping and brown in a hot oven.

Here is one anyone can make - for 4 people - POTATO FRITTERS

1 lb potatoes (grated or minced on find grater) and the juice; finely chopped onion or leek, 1/4 lb flour, 1/2 teaspoon mixed herbs, chopped parsley, salt and pepper.

Mix all the ingredients together well, and drop spoonfuls into hot fat.  Fry gently until golden brown.  

Can substitute cheese for the onion/leeks

Scones (A true British Recipe from the BBC)

Preparation time: less than 30 mins

Cooking time: 10 to 30 mins

Makes 8-12 scones

 

Ingredients

  • 8oz self raising flour
  • pinch of salt
  • 2oz butter
  • 1oz caster sugar
  • 5fl oz milk

Preparation method

  • 1. Heat the oven to 425F. Lightly grease a baking sheet.
  • 2. Mix together the flour and salt and rub in the butter. 
  • 3. Stir in the sugar and then the milk to get a soft dough.
  • 4. Turn on to a floured work surface and knead very lightly. Pat out to a round ¾in thick. Use a 2in cutter to stamp out rounds and place on a baking sheet. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
  • 5. Brush the tops of the scones with a little milk. Bake for 12-15 minutes until well risen and golden. 
  • 6. Cool on a wire rack and serve with butter and good jam and maybe some clotted cream.
