You could probably freeze the meat part of it - that should give you enough meals for the year - with something else occasionally. Wouldn't try to freeze the pototo topping though. FUN, FUN, FUN, I came across this recipe called
1 - 1 1/2 lb cooked meat (beef,pork or lamb) cut into cubes; 4 large cooked chopped potatoes, 2oz dripping, 2 finely chopped onions, 4 eggs (fried just before serving), parsley, salt & peper, pinch mixed herbs Heat the dripping and fry the onions until tender. Add potatoes and cook until golden brown, add mean & season with salt, pepper & mixed herbs. Cook until thoroughly heated, adding more fat if necessary to prevent the mix sticking to the pan (about 25-30mins) Transfer to a shallow warmed dish. Place the fried eggs on top on the meat, garnish with parsley and serve at once. That seems easy enough to me!!! |
