Where to start---

All meat should be cut against the grain to guarantee taste and tenderness, meat cut with the grain tends to be more chewy.

A lot of meat in supermarkets has the wrong descriptive labes on therefore confusing the customer.

When i started work i served my time as an apprentice for five years these chaps in the supermarkets have very little teaching.

Always trade with a local Butcher who can advise you on which cut will be most economical for you and explain how to cook it.

And always buy him a nice bottle of Scotch at Christmas.Wink

That's why I try to buy from our local farm shop, I know the owners, the meat is all local, and they no their cuts. It costs a bit more but at least it has taste which a lot of supermarket meat doesn't, it's just bland and watery.
