Lawson Posts: 2310 Joined: 17th Jul 2008 Location: USA | Posted at 03:49 on 12th January 2010 Hi everyone...I ran across Diana Sinclair's meat loaf receipe...350 degree oven for one hour....3 pounds hamburger, one can Cambell's tomato soup, one packet of dry Lipton "onion" soup mix, and one cup of cranberries...mix together and place in an sprayed cooking loaf pan. She says its low carbohydrate...about as low as you can get for meat loaf. Here's one also....in a small rectangle glass baking dish, or something simliar, mix together....2 eggs, 4 tablespoons water, 1 and 1/3 cup of Bisquick baking mix....spread dough into the sprayed pan so its to the edges ... looks like pizza dough would look covering the bottom, I used the baking mix and used my fingers for that part of it...on top spread about 1 1/2 cups of shredded cheddar cheese..or layer over it, set aside....then in another pan with an little olive oil cut up three chicken breasts into pieces, and cook until the edges of the meat are an light color, then add 2 cups of any kind of bottled salsa...I used an mild "chunky" style...and about 3/4 cup rinsed and drained black beans, stir together an top the cheese in the dish, then I chopped up real finely one green jalopeno across the top and placed in the oven and baked it 375 degrees for about 20 to 24 mins. When it comes out add around the edges more cheese and let it melt. or put it back in the oven for an minute or two. I served some frozen onions, red, green peppers I fried up lightly for some color on top, melted mroe cheese lightly over thsoe that had the center section and offered more salsa...it is warming when it is cold outside...I served this with warmed apple crisp and broccolli coleslaw. It's an very adaptive receipe to your own personal likes also. It has the taste of an thick mexcian pizza kind of , but I also found out if it's completely cooled, it can be cut in tiny bars for an appetizer also...just let the cheese that's melted "set up" more or less...then it would go well with an thick chili and an green salad perhaps. I am reading over here, that the oranges in Florida are frozen and the strawberries are iced over, and the tropical fish in the Lakes are coming up the top of the lakes by the millions..dead. They figure many more tropical fish will die also as it all thaws, and the "shock" or disease...afterwards from it all.... catches up with them. Very sad.I hope people get together and do something about this and restore them all. |

I'm having my "moments" as I was going to ask you all something...and forgot what it was...I think it was about this new program coming over here to the states from England...an talent show kind of like "Idol". Hum....Project X..? Tell me more about it if you know what I'm talking about. I take it that its entertainers for the most part trying to get into the field "big time" perhaps. In the meantime, I'll see if I can get my speakers hooked up...so I can listen to Sue's little U-tube offering...I swear I am truly into an land of silence most days any more. As you all know by now Haiti had an 7.0 quake, (on land) the UN is on its way and President Obama is pledging help also. Prayers for the people please...this year is getting off to quite an start so far...but not necessarily for the good side of things. So I guess that it is for us to change things around maybe...make things better. |
