So therefore must have an "snort"....heh? Diana..it was said yesterday of all the diets...your "low carb" one is proving to be the best out there. I walked twice yesterday about 10 to 15 minute Marjorie, Catherine and others...hoep all going well. I talked to an herbalist yesterday and started an new regiume to up my immune system..I do feel better this morning...I have about 2 months before my yearly Cardiologist check up. Found an receipe yesterday for making homemade Mustard with Tumeric in it also. I picked up this receipe from Weight Watchers yesterday...thinking about making it to avoid the mashed potatoes...for Easter. Curried Potatotes and Peas....here goes.... to One Tablespoon Extra Virgin Olice OIL...add !/2 cup of thinly sliced onion and Saute for one minute...add ! lb and 4 oz of frozen red potato wedges or steam your own...cook for five mins, stirring occasionally (cooking time less if you cooked your own ahead of time)...add 1 teaspoon bottled mince garlic and saute' one minute..add 1 14.5 oz. can diced tomatoes, undrained and 1/2 cup fat-free, less sodium chicken broth....1/2 teaspoon salt, 1 tablespoon hot curry powder and if using frozen potatoes...cook until they are tender about 9 mins...stir in 1 cup of frozen petite green peas and 1/2 cup fat-fee yogurt...and heat throughly and serve. Makes 10 --1/2 cup servings of 82 calories each. Chol. is 0.3mg...sat fat 0.2..carbs ARE high because of the potatoes at 14.3...but it could be far worse..and 18 per cent of it in calories is from fat. I have not tried it as yet, and I wonder about substituting some of the potatoes with green beans also...I have yet to play around with the receipe...but is sounded good to me and far less then many salads I've been looking at to serve also. Probably serve steamed green beans for an side dish. Maybe an green salad also with radishes and califlower bits. Easter Dinner you know. Kids are going to cook the Ham and mashed potatoes. Have soem frozen strawberries also...so am thinking making some tortilla "stacks" and adding an tablespoon of the strawberries over them and an dab of whip cream. I got some Stevia to sweeten the berries with. Makes an light dessert. My son really gets on my case these days about cooking to much. "Mom, keep it simple will ya...kids won't eat allk that!"...so goes. Her dad has heart problems and her mother is diabetic..or at least watches what she eats also. So far we have Ham, mashed potatoes, green beans..baked beans...what I bring in salads...what they do in Easter eggs...and ther strawberry "stacks" dessert. An simple green salad would allow us to use up the decorated easter eggs also. They will be making neon ones and sparlkle glitter eggs...as they say "WOW"! I guess I better get going for the day and walk some before the rain comes in later tonight...but suppose to clear off for tomarrow and then the rain comes in for several days and over Easter Sunday also.
