Fry onion, boil carrots in veg stock, i throw lots of grated ginger into the frying onion then tip it all into the boiling carrots and simmer for 20ish mins!! thats it, oh and i just use a hand processor to liquify it a little!! salt pepper, and swirl in some cream!!! it really is good!! oh i add some honey too!!!
