Lawson Posts: 2310 Joined: 17th Jul 2008 Location: USA | quotePosted at 21:28 on 6th November 2008 I made up my own pumpkin "chili" stew....about 2 or 3 cups of holloween pumpkin "sides", cleaned throuhgly inside and out, baked 30 mins in the oven and chopped up, 3 cans of red kidney beans, drained, one frozen package of red peppers, green peppers and onions, 2 cans of diced tomotes,including juices, and two packages of dried "chili" seasoning mix, and add extra chili power to taste. Heat, and cook until pumpkin is "tender" but not mushy..can go into an crock pot on low also...if it sets overnight the flavors blend better, after that you can add any kind of meat you want, whole kerrnel corn if you want, fresh herbs, whatever. the chili seasoning mix will thicken it up like an "chunky" stew....I serve it with bread an butter. |
