Ruth you can also "freeze" your non-fat yogurt also. I bought an watermelon today and they broke it trying to carry it upstairs. just split in half out in the drive way now, off to one side cause they can't reach the trash bin, they are to small. ...looks kind of like Humpty dumpty, if you understand.

Thanks for the tip about the yogurt, Shirley.  I'll have to give it a go.  Have you had frozen bananas?  Just peel, place in freezer bag and freeze.  Even if you're not crazy about bananas, when they're frozen, it's like eating ice cream.  Frozen grapes are great too.  They're like little popsicles.  We often freeze the juice of fresh lemons in ice cube trays to give a drop of flavor to a plain glass of ice water.

Sorry about the watermelon, BTW.

Oooh, Debbie, that sounds wonderful.  There is nothing more delicious than mashed potatoes, and of course, they're about the worst thing you can eat if you're trying to lose weight.

Can you post it here?

 Creamy Cauliflower Puree

  1. 8 cups bite-size cauliflower florets
  2. 4 cloves garlic, crushed and peeled
  3. 1/3 cup buttermilk or equivalent buttermilk powder
  4. 4 teaspoons extra virgin olive oil, divided
  5. 1 teaspoon butter
  6. 1/2 teaspoon salt, or to taste
  7. Freshly ground pepper
  8. Snipped fresh chives to garnish

  1. Place cauliflower florets and garlic in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes. (Alternatively, place florets and garlic in a microwave-safe bowl with 1/4 cup water, cover and microwave on High for 3 to 5 minutes.)
  2. Place the cooked cauliflower and garlic in a food processor. Add buttermilk, 2 teaspoons oil, butter, salt and pepper; pulse several times, then process until smooth and creamy. Transfer to a serving bowl. Drizzle with the remaining 2 teaspoons oil and garnish with chives, if desired. Serve hot.

Yield: 4 servings

That sounds great - and yes, many fewer calories than potatoes.

The link I posted above is a recipe thread if you have any more you'd like to post, Debbie.  Healthy and low cal, of course.  Undecided
